Consumption of Spices and Seasoningsis at an all-time high.

Consumption of spices and seasonings in North America is at an all-time high. In fact, spice consumption in North America has increased by 50 percent in the past decade. We are not only using spices more frequently and in greater volume, but in a much wider variety; approximately 28 spices are used in the average North American home.

Spices, herbs and aromatics are the leaves, stems, seed, flowers or other derivatives of plants that have a use as a food ingredient.

Most commonly herbs and spices are used to add color, flavor and aroma to either a cooked or cold dish.

Herbs are sometimes used as the main body of a dish or are sometimes used in smaller quantities to accentuate other flavors.

Spices on the other hand tend to be used more sparingly as the flavors are more concentrated, and also in conjunction with other spices and herbs to give the characteristic blends and flavors to regional and ethnic cuisine.

Spices include:

  • Stimulating Condiments (e.g. Pepper, Mustard)
  • Aromatic Spices (e.g. Cloves, Nutmeg, Mace)
  • Sweet Herbs (e.g. Thyme, Mint)
